Chicken In Tomato Sauce

Tomato Sauce Ingredients:

2 tbsp virgin olive oil

1 onion chopped in brunoise

2 garlic cloves

30 oz fresh tomato or 2 can tomato

Black pepper

1 bell pepper cut in strips

Fresh herbs

Chicken Ingredients:

4-5 oz chicken breasts

Pink salt and black pepper

1 tbsp virgin olive oil

Instructions:

1.Heat the pan where you will cook both the sauce and chicken. Add olive oil. Once hot, seal the chicken and season with salt and pepper. Set chicken aside. (don't over cook!)

2.For the sauce, in the same pan add olive oil. Once hot add chopped onion and garlic cloves. Season with salt and pepper. Once soft add the bell pepper cut in strips. Cook until soft for 5 minutes.

3.Add fresh tomato cut in wedges or canned tomato. Cook for 10-15 minutes with low heat. Season with more salt if necessary and fresh herbs.

4.Add the chicken and cover until the chicken is fully cooked, approx 15 minutes.

5.Serve with fresh greens salad (basil and arugula make a great match!)
