Fish Papillote
Ingredients:
4 firm white fish filets
½ cherry tomatoes halved
1 zucchini sliced
½ mushrooms sliced
Pink salt and black pepper
Olive oil
Seasoning alternatives: fresh herbs, lemon slices
Instructions:
Preheat oven to 400°F
1.On a sheet of parchment paper (about 18 inches long), add one fish filet, season with salt and pepper and add some olive oil. Cover with one single layer of zucchini, season. Cover the zucchini with one single layer of mushrooms. Season. Cover the mushrooms with some cherry tomatoes. Season. Each filet has to be cooked in a separated parchment paper.
2.Fold paper over fish and seasonings and crimp edges together to seal
3.Bake for 30 approx minutes per inch of fish thickness, until all the vegetables and fish are well cooked.
4.Remove fish from oven and serve inside the packet.
