Cauliflower Rice

Ingredients:

1 cauliflower head

Olive oil

Pink salt and black pepper

Juice and zest of 1 lime

Fresh herbs (mint, cilantro, parsley, oregano)

Instructions:

1.Remove stalks and cut cauliflower in florets. Insert in the food processor and pulse until the cauliflower resembles rice texture. Don't over process cause we don't want it to form a paste. Just until it looks grated. If you don't have a food processor you can use a grater.

2.Once you have your rice, it is time to cook it. Heat a pan with 1 tbsp of olive oil and add the rice. Cover (so you can lightly steam the cauliflower) and cook over medium heat for 5 minutes.

3.Uncover and add juice and zest of 1 lime, pink salt, black pepper, a drizzle of olive oil and fresh herbs such as cilantro and parsley. Serve.

Tip: if you add some roasted vegetables, it will be a great pair!
